Turkey Stock

OK...so you have the remains of your feast...now what? Well instead of tossing it and hoping the neighborhood critters don't discover that lip-smacking carcass, you could take some time, add a few spices and water...and VOILA! You have turkey stock.
What is the big deal about turkey stock? Well, it can be used as a base for sauces and gravy, as well as a great broth in soups.
Well, why not just buy it in a box in the store? Well, you can, but I see two HUGE benefits to making it on your own. One, you control what goes into your stock. You control the salt content. You control how much fat stays in your stock. And two, it it is so much cheaper to make it and store it in your freezer.

So...what do you need to turkey stock?



Well, to start, you will need the remnants of your holiday feast (Think A Christmas Story when the Bumpus hounds obliterate the turkey). Make sure you are able to fit the carcass into a stock pot (The original recipe calls for a 15 quart stock pot, but mine worked well in a 12-quart).

You will also need:

1 yellow onion

6 Sprigs of fresh thyme

2 medium celery stalks

1 medium carrot

1 medium bay leaf

1 tsp whole black peppercorns
Place the carcass into the stock pot, then cover with cold water, until the carcass is under 2" of water

Coarsely chop the vegetables (the onion can be quartered) and add to stock pot

Add spices to stock pot

Heat the mixture over high heat until it is brought to a rapid boil, then reduce heat to low, and allow the stock to simmer, stirring and skimming occasionally (I use a slotted spoon to skim the fat)


Continue simmering until the stock has a nice turkey flavor

Once the stock is done cooking, strain through cheese cloth into heat-proof containers (If you don't have cheesecloth, you can also strain through paper coffee filters.

IMPORTANT: Do not place stock in your refrigerator or freezer until the stock has cooled to room temperature! If you place the hot stock in the fridge prior to cooling off, the temperature in your fridge will heat up!

Veggie Scramble

This is a great high-protein, low-fat breakfast

6 oz. egg whites
1 medium tomato, diced
1/3 bell pepper, diced
1/2 cup shredded mozzarella cheese

In lubricated pan over medium heat, saute tomatoes and peppers until tender, then set aside

Cook egg whites over medium heat, stirring until curds form

add vegetables to egg whites

add cheese to mixture, heating for 30-60 seconds

0 g fat
5 mg cholesterol
970 mg sodium
12 g carbs

Grilled double cheese

a twist on classic grilled cheese (my kids love this)

2 slices of bread, buttered on one side
1 slice mild cheddar cheese
1 slice swiss cheese


Place 1 slice of bread, buttered side down onto frying pan over medium heat
place cheese on bread
place other bread slice on cheese, buttered side up

toast on both sides until bread is golden brown, and cheese is ooey-gooey melty

17 g fat (10 g saturated, .5 g trans fat)
46 mg cholesterol
530 mg sodium
27 g carbohydrates

Replacement options

Just something to ponder....

By replacing a 12 oz.can of regular Pepsi each day with a 16.9 oz. bottle of water,  you can cut 54,740 calories out of your diet each year. If you prefer Mountain Dew, replacing 1 can each day can eliminate 62,050 calories a year...

Fried Potatoes

This recipe does well for one person. You may increase as necessary

1 Russet potato
cooking spray
salt & pepper

Slice potato very thin. I used a mandolin.

Spray pan with cooking spray.

Cook potatoes over medium-high heat. Salt & Pepper to taste

Iced Coffee

This just something I enjoy on a hot day.

Ingredients:

6 ice cubes
8 fl.oz. brewed coffee
2 fl. oz. 1% milk
1 Tbsp sugar

Combine ingredients into glass & stir

76.95 calories
.7 g fat (.41 g saturated, .02 g trans fat)
2.47 mg cholesterol
35.89 mg sodium
15.55 g carbohydrate

If you want to add a flavored creamer, be aware that fat and calorie content will increase
