Veggie Scramble

This is a great high-protein, low-fat breakfast

6 oz. egg whites
1 medium tomato, diced
1/3 bell pepper, diced
1/2 cup shredded mozzarella cheese

In lubricated pan over medium heat, saute tomatoes and peppers until tender, then set aside

Cook egg whites over medium heat, stirring until curds form

add vegetables to egg whites

add cheese to mixture, heating for 30-60 seconds
