Veggie Scramble

This is a great high-protein, low-fat breakfast

6 oz. egg whites
1 medium tomato, diced
1/3 bell pepper, diced
1/2 cup shredded mozzarella cheese

In lubricated pan over medium heat, saute tomatoes and peppers until tender, then set aside

Cook egg whites over medium heat, stirring until curds form

add vegetables to egg whites

add cheese to mixture, heating for 30-60 seconds

970 mg sodium
12 g carbs

Grilled double cheese

a twist on classic grilled cheese (my kids love this)

2 slices of bread, buttered on one side
1 slice mild cheddar cheese
1 slice swiss cheese


Place 1 slice of bread, buttered side down onto frying pan over medium heat
place cheese on bread
place other bread slice on cheese, buttered side up

toast on both sides until bread is golden brown, and cheese is ooey-gooey melty

Just something to ponder....

Fried Potatoes

This recipe does well for one person. You may increase as necessary

1 Russet potato
cooking spray
salt & pepper

Slice potato very thin. I used a mandolin.

Spray pan with cooking spray.

Cook potatoes over medium-high heat. Salt & Pepper to taste

Iced Coffee

This just something I enjoy on a hot day.

Ingredients:

6 ice cubes
8 fl.oz. brewed coffee
2 fl. oz. 1% milk
1 Tbsp sugar

Combine ingredients into glass & stir
